Tłusty czwartek zbliża się wielkimi krokami, dlatego nie mogło zabraknąć przepisu na pączki. Jednak u mnie znajdziecie ich nieco inną odsłonę. Są pieczone, bo za smażonymi nie przepadam, a do tego, słodzone są w całości melasą z karobu, zamiast cukru ☺

Pączki powstały z wykorzystaniem produktów firmy Bakra, które znajdują się we wszystkich elementach. W cieście drożdżowym, słodzonym melasą z karobu, która oprócz słodkości, dodaje mu dodatkowego aromatu i ładnego koloru.

W nadzieniu, które przygotowałam na dwa sposoby. Pierwszy, to znany już pewnie wielu z Was słodki krem, który robi się w mig, mieszając tahini i melasę z karobu. Ja dodatkowo, zagęściłam go karobem w proszku, dzięki czemu nie wypływa z pączków, a po ich upieczeniu ma odpowiednio ścisłą konystencję. Krem jest słodki i "maślany" i świetnie nadaje się do kanapek, owsianki i różnego rodzaju deserów.

Drugie nadzienie jest jeszcze prostsze, bo składa się z suszonej morwy, którą namoczyłam, a następnie zmiksowałam z nasionami chia, aby nadać jej gęstości.

No i trzeci element, który jest prze-smacznym dopełnieniem, a mianowicie gęstą polewa karobowa, która składa się z melasy, karobu w proszku i oleju kokosowego. Polewa rozpływa się w ustach, i niesamowicie nawilża ciasto, podczas kosumpcji. Całość wykończyłam posiekaną morwą, która trochę przypomina kruszonkę, bo jest słodka i chrupiąca.

I mogłabym się tutaj dłuuuugo rozwodzić nad tym jakie są dobre, ale cokolwiek napiszę i tak nie odda to do końca tego, jakie są pyszne.

Wyobrażałam sobie je przed przystąpieniem do ostatecznego etapu pracy, i ślinka mi ciekła na samą myśl, ale po wgryzieniu się w pierwszego po prostu odleciałam i nie spodziewałam się, aż tak niesamowitych doznań kulinarnych ;)

Miękka, wilgotna polewa otulająca puszyste, aromatyczne ciasto drożdżowe, wypełnione słodkim, "maślanym" kremem. Po prostu kulinarny, wegański odlot ☺ Spróbujcie koniecznie. Wiem, że przygotowanie takiego ciasta wymaga trochę pracy i czasu, ale warto, oj jak bardzo warto....

SKŁADNIKI (10-15 pączków):

  • 1 porcja ciasta drożdżowego z tego przepisu
  • 1 porcja marmolady z morwy (przepis poniżej)
  • 1 porcja kremu karobowo-sezamowego (przepis poniżej)
  • 1 porcja polewy karobowej (przepis poniżej)
  • posiekana suszona morwa, do posypania pączków (opcjonalnie)


MARMOLADA Z MORWY:



KREM KAROBOWO-SEZAMOWY:



POLEWA KAROBOWA:

  • 100 ml melasy z karobu (ok. 1/2 szklanki)
  • 60 g oleju kokosowego (ok. 6 łyżek)
  • 2 łyżki karobu w proszku




PRZYGOTOWANIE:

Najpierw przygotowujemy dodatki, marmoladę, krem karobowy i lukier.

PRZYGOTOWANIE MARMOLADY:

Morwę zalewamy ciepłą wodą, tak aby ją przykryła i odstawiamy na 30-60 min do namoczenia, następnie porządnie odcedzamy (zachowując wodę z moczenia), wrzucamy owoce do blendera, dodajemy nasiona chia i 3-4 łyżki wody, w której moczyła się morwa. Miksujemy na gładki mus i przekładamy do miseczki. Pozostawiamy na blacie, aby pozostała w temperaturze pokojowej.

PRZYGOTOWANIE KREMU KAROBOWEGO:

Odmierzamy składniki w miseczce i dokładnie mieszamy.

PRZYGOTOWANIE POLEWY:

Melasę wlewamy do rondelka, dodajemy olej kokosowy i przesiany przez sitko karob w proszku. Delikatnie podgrzewamy, aż olej się rozpuści i dokładnie mieszamy trzepaczką. Odstawiamy w rondelku. Przed polaniem trzeba będzie ją znowu podgrzać, bo lepiej się ją nakłada, gdy jest ciepła i lejąca. Ważne aby po podgrzaniu energicznie ją przemieszać trzepaczką, bo czasem olej kokosowy się oddziela. Jej konsystencja powinna być gładka i jednolita.

PRZYGOTOWANIE PĄCZKÓW:

Gdy nasze ciasto jest już po pierwszym wyrastaniu (60-90 min.) i dobrze zagniecione, rozwałkowujemy je na grubość 5-10 mm.
Sposobów na ich nadzianie jest kilka. 
1. Po wykrojeniu kółek, nakładamy nadzienie i albo zlepiamy kółko w pieroga, bardzo dokładnie, aby nie wypłynęło, a następnie zagnieść z całości kulkę. Ta metoda jest szybka, ale czasem może z pączków wypłynąć krem.
2. Innym sposobem, który mi się sprawdzał najlepiej, jest wycięcie kółek o średnicy 9 cm, nałożenie kremu/marmolady, nakrycie go drugim kółkiem i wycięcie pączka mniejszą szklanką o średnicy 7 cm, w ten sposób brzegi są bardzo dobrze zlepione i nic nie powinno wypłynąć.
Następnie lekko rolujemy pączka  w bardziej okrągły kształt.
3. Pieczenie samych kulek i nadziewanie ich po upieczeniu może się tutaj nie sprawdzić, bo krem karobowy jest dosyć gęsty i nie jestem pewna, czy da się wygodnie nadziać. Ale możecie spróbować tę metodę. Ja trzymałam się drugiej metody i sprawdziła mi się ona najlepiej.

Gdy nasze pączki są już nadziane i zaokrąglone, układamy je na blasze wyłożonej papierem do pieczenia i odstawiamy w ciepłe miejsce do ponownego wyrastania, na 20-30 minut.
W międzyczasie nagrzewamy piekarnik do 180°C.
Pączki pieczemy ok. 15 minut.

Odstawiamy do przestygnięcia, polewamy podgrzaną polewą i posypujemy posiekaną morwą.

Część polewy nam spłynie, ale to nie szkodzi, bo po przełożeniu pączków na tacę, można tę polewę zebrać, ponownie podgrzać i polać znowu. Takie pączki można już zajadać, lub odstawić aby polewa nieco zgęstniała.

"Fat Thursday" is fast approaching in Poland, and therefore I couldn't miss the opportunity to post a recipe for donuts. Because it is the day, when we eat donuts all day ;) However, these are not the traditional, fried donuts, cause I'm not a fan of them. These are baked, and also sweetened entirely with carob molasses instead of refined sugar.

The yeast dough, sweetened with carob molasses, has a wonderful aroma  and color thanks to it.

I prepared two fillings. First, which is probably already familiar to many of you is a sweet cream that you can make in a moment, mixing tahini and carob molasses. I additionally thickened it with carob powder, so it's easier to stuff the donuts and firm and dense after baking. The cream is sweet and "buttery" and is also ideal for sandwiches, porridge and all kinds of desserts.

The second filling is even more simple, because it consists of the dried mulberries, which were soaked, and then mixed with chia seeds, to make the marmalade thick.

And the last element, which is extremely tasty, is a thick carob glaze, which I made with carob molasses, carob powder and coconut oil. This glaze just melts in your mouth, and incredibly moisturize the dough while you bite in to the dough. Everything is finished with chopped mulberries, which are a bit like crumble, because they are sweet and crunchy.

And I could elaborate looong on how tasty they are, but whatever I write, would not properly describe how delicious they are.

I imagined them before proceeding to the final stage of work, and couldn't wait to eat them, but after the first by, I just wen to heaven... ;)

Soft, moist glaze coating the fluffy, flavorful yeast dough filled with sweet, "buttery" cream. Simply a culinary, vegan foodgasm☺ Give them a try. I know that the preparation of this kind of dough needs a little work and time, but it's worth it, oh, very worth it...

INGREDIENTS (10-15 donuts):

  • 1 portion of the yeast dough from this recipe
  • 1 portion of mulberry marmalade (recipe below)
  • 1 serving of the tahini-carob cream (recipe below)
  • 1 portion of carob glaze (recipe below)
  • chopped dried mulberries, for sprinkling (optional)



MULBERRY MARMALADE:

  • 1/2 C dried white mulberries (50 g)
  • 3-4 tbsp water, from soaking the mulberries
  • 1 tbsp chia seeds



TAHINI-CAROB CREAM:

  • 1/3 C carob molasses from Bakra (80 ml)
  • 1/3 C tahini from Bakra (80 g)
  • 2 tbsp carob powder from Bakra (15 g)


CAROB GLAZE:


  • 100 ml of carob molasses (approx. 1/2 cup)
  • 60g coconut oil (approx. 6 tbsp)
  • 2 tbsp carob powder




PREPARATION:

First prepare the marmalade, cream and glaze.


PREPARATION OF THE MARMALADE:

Put mulberries in a cup and cover with warm water. Leave them to soak for 30-60 min. then drain them off very precisely (keep the water from soaking!), put the fruits in a the blender, add chia seeds and 3-4 tbsp of water from soaking. Blend everything in to a smooth mousse and transfer it into a bowl. Leave it on a counter to keep it in a room temperature.

PREPARATION OF THE TAHINI-CAROB CREAM:

Measure out the ingredients in a bowl, stir well and set aside.

PREPARATION OF THE CAROB GLAZE:

Por the carob molasses into a saucepan, add the coconut oil and sieve the carob powder in to a pot. Gently heat the mixture up, until the oil will dissolve and mix thoroughly with a whisk. Leave it in on a counter in a saucepan. Before glazing  the donuts it will need to be warmed again, it's easier to apply, when it's warm. It's important that after heating it will be stired well, because sometimes the coconut oil separates. The consistency should be smooth and uniform.


PREPARATION OF THE DONUTS:

When the dough is after the first rising (60-90 min.) and properly kneaded, rool it to a thickness of 5-10 mm.
There are few ways of stuffing the donuts. 
1. After cutting out the circles from the dough, you can put the crem/maralade on top and knead it in to a half moon dumpling, firmly press the sides and roll a ball. This method is fast but the filling can leak out while baking.
2. Another way, which I found the best is to cut large circles (9 cm diameter), then putting the filling in the middle, after that covering the first circle with the second circle and caut out the donut with a smaller glass (7 cm diamater). This guarantees that the sides are well bonded. After that you, roll the donut gently in to a ball.
3. There is also a simpler way, you can try, but it may not work with this filling. You can bake the balls without the filling and then, using a filler, press the filling inside, but the tahini-carob crea is quite thick and stiff, so it may be difficult. I prefer the second method. hardBaking same balls and stuffing them after baking can not see because karobowy cream is quite thick and I'm not sure if I can comfortably stuff. But you can try this method.

When the donuts are filled, put them on a baking tray lined with baking paper and leave in a warm place to rise again, for 20-30 minutes.
Meanwhile preheat the oven to 180 ° C.
Bake the donuts for approx. 15 minutes. Leave them to cool down a little bit, cover with hot glaze and sprinkle with chopped mulberries. The glaze will partially flow off, but don't worry, when you put ther donuts on a tray, you can scrape it down, put it back in to a pot, heat it up and use again. Eat right away, if you don't mind covering your hands with the glazing or wait a while until it gest slightly thickened.
