RAW ZUCCHINI SPAGHETTI WITH "MEATBALLS" AND A TOMATO-PEPPER SAUCE



Dziś zapraszam Was na wyjątkowe danie, które stworzyłam, specjalnie dla Free Delikatesy Ekologiczne. Jest to bardzo bogato zaopatrzony sklep, w którym do woli można wybierać w ciekawych, różnorodnych, a przede wszystkim naturalnych produktach. Bardzo się ucieszyłam z propozycji stworzenia ciekawego roślinnego posiłku z wykorzystaniem ich składników. 
Momentalnie mój wzrok powędrował na dział z warzywami. A, że mamy teraz najlepszy czas na zajadanie się dużą ilością świeżych warzyw i owoców, a do tego jest już sezon na cukinię, obsadziłam właśnie ją w roli głównej.

Na myśl od razu przyszło mi danie, które już od dawna miałam w planach, czyli surowy makaron z cukinii. Tak, dobrze przeczytaliście. Ze świeżej, surowej cukinii można przygotować wspaniałą, lekką i letnią alternatywę do tradycyjnego spaghetti.

A do tego pyszny sos. Ale nie gotowy, ze słoika, a przygotowany ze słodkich, soczystych pomidorków koktajlowych z dodatkami, który robi się w 2 minuty. 

Ponadto, aby jeszcze bardziej urozmaicić danie, przygotowałam pyszne i bardzo odżywcze "pulpeciki" z orzechów. Które oprócz serwowania ich w takim daniu, mogą być świetną opcją na energetyczną, wytrawną przekąskę. Jeśli nie mamy ochoty na słodkie trufle, wtedy można sięgnąć właśnie po takie słone, orzechowe i bardzo aromatyczne kuleczki. Dostarczą nam one energii, witamin i dobrych tłuszczy, które są nam bardzo potrzebne.

Całe danie jest wspaniałe, jest lekkie, ale można się nim najeść na dłuższy czas. Jest kopalnią witamin i minerałów. Bogate jest w wartościowe enzymy, które tracimy podczas obróbki termicznej. A przede wszystkim, przygotowane jest z naturalnych składników, czyli takich, jakie lubię najbardziej. Dla mnie to idealny letni posiłek. Polecam

SKŁADNIKI (4 porcje):


"MAKARON":



SOS POMIDOROWO-PAPRYKOWY:



ORZECHOWE PULPECIKI (ok. 30 sztuk):



PRZYGOTOWANIE:

Najpierw przygotowujemy pulpeciki. Z podanych proporcji wychodzi ich ok. 30 sztuk, możliwe, że nie zjemy ich wszystkich od razu, ale lepiej jest właśnie przygotować większą ilość, bo dzięki temu można je mieć zawsze pod ręką. Przechowywane w szczelnie zamkniętym pojemniku w lodówce, pozostaną świeże do tygodnia, można je także przechowywać w zamrażarce do 2 miesięcy. 

Wsypujemy do blendera migdały i orzeszki ziemne i miksujemy na mąkę. Następnie dodajemy resztę składników i miksujemy kilka minut, aż masa zamieni się w lepką kulę. Lepimy z niej kuleczki wielkości dużego orzecha laskowego i wstawiamy do lodówki.

Sos także można przygotować z wyprzedzeniem, najlepiej rano. Oczywiście jeśli nam go trochę zostanie, to można go przechować w lodówce do 3 dni, ale im bardziej świeży tym lepiej. Namaczamy suszone pomidory, jeśli trzeba. Myjemy warzywa, usuwamy ogonki z pomidorków, wydrążamy i kroimy paprykę, obieramy czosnek, usuwamy pestkę z daktyla, jeśli trzeba. Następnie wrzucamy je do blendera, dodajemy resztę składników i miksujemy na gładko. Sos przelewamy do słoika, zakręcamy i wkładamy do lodówki.

Makaron z cukinii przygotowujemy ok. 5 minut przed spożyciem. Na stole kładziemy dużą miskę z wodą i kilkoma kostkami lodu. Cukinię myjemy i ścieramy specjalną obieraczką typu "julienne" do miski. (zabieg ten pozwala zachować jej chrupkość i sprężystość)

Paseczki ścieramy do momentu w którym pojawią się pestki, wtedy przestajemy i pozostałą część cukinii używamy do czegoś innego.

Następnie przecedzamy makaron w durszlaku i pozostawiamy go jeszcze w nim na 1-2 minuty, aby dokładnie odciekł z wody. Bezpośrednio przed spożyciem wkładamy spaghetti do miski, polewamy sosem i mieszamy (najlepiej ręką). Układamy porcje makaronu na talerzach i dokładamy pulpeciki. Spożywamy od razu. Cukinia nadal będzie puszczać sok, dlatego danie wykładamy na talerz dosłownie minutę przed spożyciem.

Today I present you a unique dish that I created specially for Free Delikatesy Ekologiczne. It is a very well-stocked organic shop where you can choose from many interesting and natural products.

Immediately, my eyes went to the department with vegetables, cause now it's the perfect time to indulge in those. And I picked the zucchini, which is in season right now. Then I immediately thought of raw zucchini spaghetti, which I wanted to make for a long time now. 


I served it with a delicious sauce. But not a ready-made from the jar, but a fresh one, prepared with sweet, juicy cherry tomatoes that you can make in 2 minutes.


In addition, I also prepared tasty and very nutritious "meatballs", made with nuts. They make a very nice accompaniment to the dish, but if you will have some left, then you can eat them on it's own, as a great savory snack. When you do not fancy anything sweet and need a good, nutritious energy boost, then grab a few of them :) 


The whole meal is great, light, but it will satisfy your hunger for few hours. It's full of vitamins and minerals. It is rich in valuable enzymes that we lose during cooking the food in a high temperature. And above all, it's prepared with natural ingredients, which I like the most. For me it's the perfect summer meal. 




INGREDIENTS (4 servings):



"ZUCCHINI PASTA":



  • 2 large zucchini /courgettes (1 kg)


TOMATO-PEPPER SAUCE:



  • 250g cherry tomatoes (10-15 pieces)
  • 1 medium red bell pepper (150g)
  • 1 fresh or dried date
  • 1 garlic clove
  • 2 sun-dried tomatoes
  • 1 tbsp extra virgin olive oil 
  • 1 tsp balsamic vinegar
  • 1/3 tsp smoked paprika
  • 1/3 tsp pink himalayan salt
  • 1/4 tsp ground black pepper
  • a pinch of cayenne pepper


NUT "MEATBALLS" (approx. 30 pieces):



  • 100 g almonds 
  • 75 g peanuts or walnuts
  • 3 tbsp nutritional yeast flakes
  • 2 tbsp Tamari soy sauce or regular soy sauce
  • 1 tbsp extra virgin olive oil 
  • 1/2 tbsp white miso paste
  • 1 date (fresh or dried)
  • 2 sun-dried tomatoes
  • 1 garlic clove
  • 1/2 tsp cumin seeds
  • 1/2 tsp smoked paprika
  • 1 tbsp fresh oregano leaves or 1 tsp dried oregano
  • 1/2 tsp ground black pepper
  • 1/3 tsp fennel seeds
  • a pinch of ground allspice
  • 1 tbsp lemon juice
  • a pinch of cayenne pepper



PREPARATION:


First prepare the "meatballs". You will get approx. 30 pieces from ingredients listed above, it is possible that you will not eat them all at once, but it is better just to prepare more, because it allows you to have them always at hand. Stored in an airtight container in the fridge they will stay fresh for a week, you can also store them in the freezer for two months.

In your blender, mix almonds and peanuts into a flour. Then add the remaining ingredients and mix for a few minutes, until the mixture turns into a sticky ball. Roll the "meatballs" of the size of a large hazelnut and put them in the fridge.

The sauce can be prepared in advance as well, preferably in the morning. Of course, when you will have some left from your dinner, you can store it in the fridge for 3 days, but it's best when it's fresh. 

Soak sun-dried tomatoes, if necessary. Wash the vegetables, remove green tops from the tomatoes, deseed and cut the bell pepper, peel the garlic, pit the date, if necessary. Then put everything in a blender, add the remaining ingredients and mix until smooth. Pour the sauce into a jar, seal it and put in the fridge.

Make zucchini pasta approx. 5 minutes before consumption. Prepare a large bowl, filled with water and a few ice-cubes. Wash the zucchini and grate it with a "julienne" peeler. Place the strips in a prepared bowl, grate it to the point when you will see the seeds, then stop and use the rest of the zucchini for a different dish. Next drain the pasta in a colander and leave it there for a 1-2 minutes to drain evenly.


Just before consumption put the spaghetti in a bowl, pour the sauce on top and mix (best with your hand). Put portions of pasta on plates and add "meatballs" on top. Eat right away. Zucchini will continue to release the water so it's really need to be eaten immediately.
