Proste do zrobienia, a przy tym ładnie prezentujące się i odżywcze danie. Doskonałe na obiad lub ciepłą kolację.

Wykorzystałam tutaj dynię acorn, którą po upieczeniu można jeść ze skórką, ale jeśli jej nie macie to z dynią hokkaido, której też nie trzeba obierać, wyjdzie równie dobrze :)

Dynia acorn charakteryzuje się lekko orzechowym aromatem, który super współgra tutaj z sezamowym tahini i ugotowanym sorgo, które ma delikatnie prażony posmak.

Dzięki nadzianiu dyni po upieczeniu i wykorzystaniu do tego sprężystych i sypkich ziaren sorgo, cała potrawa ma w sobie dużo ciekawych faktur i przyjemnie się ją je.

Małe kuleczki sorgo, chrupiące warzywa, soczyste pomidory, aromatyczna bazylia i bardzo smaczny, kremowy sos na bazie tahini Bakra.






Który jest pełen indyjskich przypraw, i w zależności od tego co mamy pod ręką, można użyć mieszanki "curry" lub "garam masala" albo też stosować je zamiennie i delektować różnymi wersjami dania ☺ Polecam

SKŁADNIKI (1-2 małe dynie odmiany acorn lub hokkaido):


DYNIA + NADZIENIE:

  • 1-2 małe dynie odmiany acorn lub hokkaido
  • 2 szklanki ugotowanych ziaren sorgo (lub innych ziaren,kaszy lub ryżu)
  • 2 garści świeżego szpinaku lub roszponki
  • 1 szklanka ugotowanej czerwonej fasoli lub innej fasoli albo ciecierzycy
  • 1 mała czerwona papryka, pokrojona w kostkę
  • 1 szklanka pomidorków koktajlowych
  • 1 mała czerwona cebula lub szalotka
  • 1 ząbek czosnku
  • 1 cm imbiru
  • 1 ostra papryczka (opcjonalnie)
  • szczypta soli
  • odrobina oleju kokosowego lub innego (do smażenia)
  • garść świeżej bazylii lub kolendry
  • płatki ostrej papryki, podprażone płatki kokosowe lub migdałowe (do podania, opcjonalnie)

SOS:

  • 1/3 szklanki tahini Bakra
  • 1 płaska łyżka mieszanki przypraw "curry" lub "garam masala"
  • 1 łyżka sosu sojowego lub 1/4 łyżeczki różowej soli himalajskiej
  • 1 łyżka soku z cytryny lub limonki
  • 1/4-1/2 szklanki wody lub mleka kokosowego (do rozrzedzenia sosu)


PRZYGOTOWANIE:

Nagrzewamy piekarnik do 200°C. Dynię myjemy, przekrawamy na pół, wydrążamy i układamy na blasze wyłożonej papierem. Pieczemy 40-60 minut (w zależności od wielkości)

W międzyczasie podsmażamy przez kilka minut cebulę z czosnkiem, imbirem i ostrą papryczką, dodajemy resztę składników nadzienia, mieszamy dokładnie i po 2-3 minutach zdejmujemy z ognia.

Następnie w miseczce mieszamy składniki na sos.

Gdy dynia jest już upieczona, wypełniamy jej połówki nadzieniem, polewamy sosem i serwujemy.

I used acorn squash, which after baking can be eaten with the skin, but if you do not have it, Hokkaido pumpkin, which doesn't have to be peeled as well will work too :)

Acorn squash has a slightly nutty flavor that combines great with sesame butter and cooked sorghum grains, which has a slightly toasted aroma.

I also stuff the acorn after baking, and with the use of elastic and loose sorghum grains, the whole dish has a lot of interesting textures and is pleasant to eat.

Small balls of sorghum, crispy vegetables, juicy tomatoes, fragrant basil and very tasty, creamy tahini sauce. Which is full of Indian spices, and depending on what you have on hand, you can use a mixture of "curry powder" or "garam masala" or use them interchangeably and enjoy different versions of the dish. ☺

INGREDIENTS (1-2 small acorn squash or hokkaido pumpkin)

ROASTED PUMPKIN + THE FILLING:

  • 1-2 small acorn squash or hokkaido pumpkin
  • 2 C cooked sorghum grains  (or other grains, kasha or rice)
  • 2 handfuls of fresh spinach or lamb's lettuce
  • 1 C cooked red beans or other beans or chickpeas
  • 1 small red bell pepper, diced
  • 1 C cherry tomatoes
  • 1 small red onion or a shallot
  • 1 clove of garlic
  • 1 cm ginger
  • 1 small chili pepper (optional)
  • pinch of salt
  • a little bit of coconut oil or regular oil (for frying)
  • handful of fresh basil or cilantro
  • toasted coconut flakes or almond flakes (for serving, optional)

SAUCE:

  • 1/3 C tahini
  • 1 flat tbsp "curry" powder or "garam masala"
  • 1 tbsp soy sauce or 1/4 tsp pink himalayan salt
  • 1 tbsp lemon juice or lime juice
  • 1/4-1/2 C water or coconut milk (to thin the sauce)



PREPARATION:

Preheat the oven to 200 ° C. Wash the pumpkin, cut it in half, deseed and arrange on a baking sheet lined with baking paper. Bake for 40-60 minutes (depending on the size)

In the meantime, fry the onion with garlic, ginger and chili, add the rest of the ingredients of the filling, mix thoroughly and after 2-3 minutes, take it off the heat.

Then, in a small bowl mix the ingredients for the sauce.

When the pumpkin is baked, add the filling, pour the sauce on top and serve.
