                          HOMEMADE ZA'ATAR / ZATHAR



Za'atar / zathar (pol. "zatar"), to w języku arabskim nawa przyprawy/zioła/rośliny popularnej w tamtym rejonie, podobnej do tymianku i oregano. Ale słowo to, określa również mieszankę przyprawową, której skład różni się w zależności od regionu i upodobań. Można spotkać taką, która przygotowana jest z zaledwie 3 składników, ale też i takie, które mają ich 7. Najczęściej występuje w formie sypkiej, ale spotkać też można i takie, które zmiksowane są z oliwą z oliwek, tworząc coś na kształt pasty.

Istnieją różne odmiany zataru, np. arabska, izraelska, libańska, zielona, czerwona. Różnią się one proporcjami i ilością składników. 

Podstawową bazą zataru, jest mieszanka tymianku, sumaku i podprażonych ziaren sezamu, a często, dodatkowo też soli; te bardziej rozbudowane wzbogacone bywają o oregano, kumin, majeranek lub też bazylię.

Mi osobiście, najbardziej smakuje wersja z większą ilością składników, w której czuć mocno aromat prażonego sezamu oraz ziół, i dzisiaj właśnie, chcę ją Wam zaprezentować.

I choć sama nazwa oraz pewne jej elementy brzmią bardzo egzotycznie, to wykonanie jej jest naprawdę bardzo proste i o wiele łatwiejsze teraz, bo taki np. "sumak", który bardzo ciężko było jeszcze do niedawna dostać w "normalnym" sklepie, pojawił się w ofercie polskiej firmy Bakra, dzięki której zaczyna już on występować w coraz większej ilości pobliskich sklepów; można go też kupić on-line w ich firmowym sklepie (o tutaj).




Sumak to zmielone jagody dziko rosnącego krzewu, porastającego tereny Morza Śródziemnego. W smaku kwaskowy, podobny do cytryny, mi trochę też przywodzi na myśl nasze kwaskowate porzeczki. Oprócz dodawania go do mieszanki, którą dzisiaj prezentuję, można używać go w różnych daniach albo np. sałatkach, właśnie jako kwaskowaty akcent, podobny do cytryny. Dlatego kupując sumak, pamiętajcie, że znajdzie zastosowanie nie tylko do przygotowania zataru, a w wielu innych potrawach, i sami na pewno znajdziecie też swoje własne, ulubione sposoby na jego wykorzystanie. Oprócz walorów smakowych, sumak ma działanie antywirusowe, przeciwgrzybicze i pomaga w walce z alergiami.

A gdy już się w niego zaopatrzymy, to po resztę składników wystarczy sięgnąć do kuchennej szafki, bo jestem pewna, że większość z Was ma je zawsze w domu.
Samo przygotowanie mieszanki polega już wtedy tylko na podprażeniu ziaren sezamu, a następnie delikatnym utarciu całości w moździerzu/młynku/blenderze lub też jedynie ich zmieszaniu, jeśli nie mamy czym ich utrzeć.

Cała kompozycja świetnie smakuje i dodaje charakteru wielu daniom. Może służyć jako zwykła przyprawa, posypka albo np. marynata. Nawet najprostsze danie składające się z samych pieczonych warzyw, dzięki dodatkowi zataru zamienia się w coś bardzo wyjątkowego. Proste chlebki nim posypane nabierają świetnego aromatu a okraszony nim jogurt-dip, hummus albo też zwykłe kanapki zyskują na smaku. Polecam ☺

SKŁADNIKI (na ok. 80 g gotowej mieszanki):

  • 8 łyżek ziaren białego sezamu (łuskanego lub niełuskanego)
  • 4 łyżeczki sumaku Bakra
  • 4 łyżeczki suszonego tymianku
  • 4 łyżeczki suszonego oregano
  • 2 łyżeczki mielonego kuminu Bakra
  • 1/2 łyżeczki różowej soli himalajskiej (opcjonalnie)


PRZYGOTOWANIE:

Sezam prażymy kilka minut na rozgrzanej, suchej patelni, aż się ładnie zarumieni.
Zdejmujemy z ognia, przesypujemy do moździerza i ucieramy chwilkę.
Dodajemy tymianek oraz oregano i dalej chwilę ucieramy.
Następnie dosypujemy sumak wraz z kuminem i opcjonalnie sól, mieszamy dokładnie i przesypujemy do szczelnego słoiczka.
Przechowujemy w suchym i chłodnym miejscu do kilku tygodni.

The word a'atar / zathar in Arabic, is a name of a spice / plant growing by the Mediterranean Sea, which is similar to thyme and oregano. But the word "za'atar" also defines a spice blend, popular in that area. It differs in the number of the ingredients, depending on the region and tradition. You can find one that is prepared with only 3 ingredients, and other made with seven, usually it's a dried blend but sometimes is mixed with olive oil, to form a paste.

There are different varieties of za'atar: Arabic, Israeli, Lebanese, green or red kind. They differ in the proportions and amounts of ingredients. The primary base of this blend is made with thyme, sumac and toasted sesame seeds, often combined with salt; Other kinds are enriched with oregano, cumin, marjoram or basil.

My favorite kind is the one with more ingredients, in which you can taste the herbal aroma of the spices and a strong toasted sesame seeds flavor.

Some of the components, like sumac, sounds exotic but they are quite easy to find nowadays.


Homemade za'atar


Sumac is made with ground berries of the plant with the same name, growind in the Mediterranean. It's got a sour taste similar to lemon, and for me, it's also a little bit similar to tangy currants. In addition to use it when making za'atar, you can use it in a variety of dishes, for eg. salads, the same way you use lemon or some other sour component. Apart from the interesting taste, sumac has antiviral, antifungal properties and also helps to fight the allergies.

Za'atar is very easy to make, you just have to toast the sesame seeds and then grind them with the rest in a mortar or a blender if you haven't got the mortar.





The whole composition tastes great and adds the character to many dishes. It can be used as a simple seasoning, sprinkle or marinade. Even the simplest dish consisting of roasted vegetables, thanks to za'atar turns into something very special. Simple bread, sprinkled with it gets a great flavor and a yoghurt, dip or hummus or just a simple sandwich enriched with za'atar is gaining an extra taste.

INGREDIENTS (for approx. 80 g of za'atar):

  • 8 tbsp white sesame seeds (hulled or unhulled)
  • 4 tsp sumac
  • 4 tsp dried thyme
  • 4 tsp dried oregano
  • 2 tsp ground cumin
  • 1/2 tsp pink himalayan salt (optional)



PREPARATION:

Toast the sesame seeds for few minutes in a hot, dry frying pan, until golden.
Next, take it off the heat, transfer the seeds into a mortar and grind for a moment.
Add the thyme and oregano and continue grinding.
After that, add sumac, cumin and optionally salt, mix thoroughly with a spoon and transfer the blend to a sealed jar.
Store in a cool, dry, place for several weeks.
