MLEKO Z RYŻU BASMATI

                           BASMATI RICE MILK



Nazwa Basmati, wywodzi się od słowa "vasmati" co oznacza "pachnący" bądź "aromatyczny". Ryż tej odmiany ma długie, cienkie ziarna i odznacza się właśnie niezwykłą, jedyną w swoim rodzaju wonią i smakiem. Uprawiany jest u podnóża Himalajów i stanowi jeden z najbardziej popularnych składników i dodatków w kuchni indyjskiej.

Ja osobiście go uwielbiam, uwielbiam jego zapach, który unosi się w kuchni, podczas jego gotowania, a także jego oryginalny smak, który mocno czuć podczas jedzenia.

Podczas surfowania w internecie natknęłam się przypadkowo na ten wpis, który mnie bardzo zaciekawił. Nie pomyślałam wcześniej aby z tego ryżu zrobić mleko. Dotychczas, ryżu tego używałam głównie jako dodatek do obiadu. 

Już następnego dnia mleko było przeze mnie zrobione i od razu mnie zachwyciło. Dlaczego?


ZALETY MLEKA Z RYŻU BASMATI

1. ma niesamowity smak i aromat
2. ma gęstą konsystencję (bo jeśli miksujemy go w Vitamix'ie, nie trzeba go przecedzać)
3. robi się je bardzo szybko, gdyż ryż wymaga jedynie 10-15 minut gotowania + nie trzeba go przecedzać (punkt 2)
4. mleko jest tanie w przygotowaniu, a ryż jest bardzo wydajny, zaledwie pół szklanki niegotowanego ryżu, daje nam 4 szklanki mleka
5. mleko jest przepyszne jeśli dodamy do niego wanilię i trochę słodzidła, ale smakuje mi także bez dodatków

Ryż ten jest nieco uboższy w błonnik i składniki odżywcze, niż inne, "razowe" i kolorowe odmiany, ale zawiera jednak pewne wartościowe pierwiastki, jak: żelazo, witaminy z grupy B oraz kwas foliowy. Do tego mleko ryżowe odznacza się bardzo niską zawartością tłuszczu.

Dla mnie to bardzo fajne i smaczne odkrycie i na pewno mleko to będę często przygotowywać. Jeśli tak jak ja, jesteście wielkimi fanami tej niezwykłej odmiany, na pewno i Wam zasmakuje.

Oprócz picia i delektowania się jego smakiem, pod koniec tygodnia podzielę się z Wami bardzo ciekawym przepisem na fajne śniadanie, do którego przyda Wam się to mleko. Dlatego naprawdę polecam spróbować. 

Przy okazji podaję również pewne wskazówki na temat gotowania tej odmiany ryżu.


JAK PRAWIDŁOWO UGOTOWAĆ RYŻ BASMATI:

Hinduskie przysłowie mówi: "Perfectly cooked rice grains are like brothers, close, yet separate, and definitely not stuck together"

Idealnie ugotowany ryż jest miękki i sypki. Aby idealnie ugotować w ten sposób ryż basmati, wystarczy jedynie pamiętać o kilku sprawach.

1. Odmierzoną ilość suchego ryżu wsypujemy do garnka, zalewamy wodą, mieszamy ręką, a gdy woda się zabieli, odlewamy ją z garnka. Powtarzamy czynność jeszcze raz lub dwa, aż woda będzie bardziej czysta. Czynność ta pozwala opłukać ziarna z części skrobi, która za bardzo skleja ryż podczas jego gotowania. Ryż niektórzy potem moczą 30 minut, ale można to pominąć.

2. Do przepłukanego ryżu dodajemy odpowiednią ilość wody i odrobinę soli. Proporcje 1:2 (1-ryż, woda-2)

3. Garnek zakrywamy, stawiamy na ogniu, gdy się zagotuje, zmniejszamy ogień i gotujemy na bardzo małym ogniu ok. 10-15 minut ( w zakrytym garnku). Można także garnek przykryć folią aluminiową, a na to nałożyć pokrywkę, dzięki temu cała para zostaje w garnku i równomiernie gotuje ryż.

4. Gdy ryż jest miękki, zdejmujemy garnek z ognia, prawidłowo ugotowany wchłonie całą wodę, jeśli nie to odcedzamy go na sicie.

SKŁADNKI ( 4 szklanki mleka):

  • 1,5 szklanki (225g) ugotowanego ryżu Basmati (1/2 szklanki suchego)
  • 3 szklanki filtrowanej wody (750ml)


DODATKI:

  • syrop słodzący
  • 1/2 laski wanilii lub 1/3 łyżeczki suszonej wanilii


PRZYGOTOWANIE:

Gotujemy ryż, zgodnie z instrukcją powyżej, odstawiamy no ostygnięcia. Następnie przekładamy wybraną ilość do kielicha blendera, dodajemy wodę i miksujemy 2 minuty. Jeśli miksujemy w Vitamix'ie, nie musimy go przecedzać (oczywiście możemy to zrobić, jeśli chcemy aby nasze mleko było rzadsze, mi gęsta konsystencja bardzo pasuje). Jeśli miksujemy w innym blenderze, przecedzamy mleko przez gazę lub specjalną torebkę (nut milk bag). Dodajemy słodziło i wanilię, jeśli używamy. Przelewamy mleko do butelki lub słoika, zakrywamy i przechowujemy w lodówce do 3 dni. Przed użyciem wstrząsamy butelką lub mieszamy mleko łyżką.

The word "Basmati" derived from the word "vasmati" which means "fragrant" or "aromatic". This variety of rice has long, thin grain and has a very unusual, unique scent and taste. It is grown in the Himalayas and is one of the most popular ingredients and additives in Indian cuisine.

I personally love it, I love the smell, which rises in the kitchen while cooking, as well as its original taste.

While surfing in the internet I came across this post, which made me very curious. I hadn't  thought of making a milk using this kin of rice.  So far, I used it mainly as an additive to dinner.

The next day the milk was ready and immediately amazed me. Why?


BENEFITS OF BASMATI RICE MILK

1. it has an amazing flavor and aroma
2. it has a thick consistency (because if we mix it in Vitamix'ie, we do not have to strain it, after)
3. it's quick to prepare, because rice requires only 10-15 minutes of cooking + milk does not have to be strained after mixing (point 2)
4. also this milk is inexpensive, and the rice is very efficient, just half a cup of uncooked rice, gives us 4 cups of milk
5. the milk is even more delicious, when you add some vanilla and sweetener to it 


This kind of rice is slightly poorer in fiber and nutrients than other "wholewheat" and color varieties, but still it contains some valuable elements such as iron, B vitamins and folic acid. Also rice milk has a very low fat content.

For me it is very cool and tasty discovery and certainly I will prepare this milk more often. If, like me, you are a big fan of this incredible variety, than you certainly should give it a try.

It's perfect for drinking from the glass, but you can also you it for other purposes, at the end of the week I will share an interesting recipe for a nice breakfast calling for this milk.

Also below I'm posting some tips on how to cook the rice.

HOW TO PROPERLY COOK BASMATI RICE:

Indian proverb says: "Perfectly cooked rice grains are like brothers, close, yet separate, and definitely not stuck together"

Perfectly cooked rice is soft and fluffy. To perfectly cook the basmati rice this way, you only need to remember a few things.

1. Put the measured amount of dry rice in a pot, add water, mix it with your hand, and drain, repeat it twice. This step allows to rinse of the starch, which will glue the rice grains in a pot. Then, some people soak the rice for 30 minutes, but you can skip this.

2. Put 1 part of the rice in a pot, add a little bit of  salt and add 2 parts of water.

3. Cover the pot and when the water boils, reduce the heat and simmer on very low heat for approx. 10-15 minutes (in a covered pot). You can also cover the pot with aluminum foil and put the lid on it, so that, the steam is in a pot and cook the rice evenly.

4. When the rice is soft, take off the pan from the heat, if cooked properly, it will absorb all the water, if not drain it off.

INGREDIENTS (for 4 cups of milk):

  • 1,5 C (225g) cooked Basmati rice (1/2 C uncooked rice)
  • 3 C filtered water (750ml)


OPTIONAL INGREDIENTS:

  • maple syrup or other sweetener
  • 1/2 vanilla bean (just the seeds) or 1/3 tsp dried vanilla


PREPARATION:

Cook the rice according to the tips above, and let it cool down. Next, transfer it to the blender cup and add water. Mix on the highest speed for 2 minutes. If you're using Vitamix, you don't have to strain it (although you can, if you want to get thinner consistency). I you're using a blender with w lower speed and power, strain the milk, using a cheesecloth or a nut milk bag. Add the sweetener and vanilla, if using. Pour the milk in a bottle or jar, cover and store in the fridge for up to 3 days. Shake it well, before serving.

    1. tak, z tym, że garnek powinien mieć nieprzywierające dno, bo inaczej może się przypalić, jeśli gotujemy coś tylko z tym mlekiem, jeśli używamy go do zagęszczania potraw np., to garnek może być zwykły. poza tym mleko dość mocno gęstnieje podczas gotowania, można wtedy dodać więcej wody, jeśli wolimy rzadszą konsystencję. p.s. pod koniec tygodnia będzie przepis na gotowane danie z tym mlekiem, także zapraszam
