To mój tegoroczny hit Świąteczny. Jak tylko natrafiłam na ten przepis od razu wiedziałam, że muszę go spróbować. Bardzo lubię Jamiego i jego wege potrawy. W swoim gotowaniu stawia on na prostotę i naturalne składniki, a to coś co ja też najbardziej lubię. 
Wiedziałam, że pieczeń będzie dobra, ale nie spodziewałam się, że aż tak. Niesamowity akcent całości nadaje tu cytryna, która świetnie "wybija" dość neutralny smak pozostałych składników. W pieczeni także wyraźnie czuć grzyby i zioła, co jest jej kolejną zaletą. Poza tym jest odpowiednio zwarta. A jeszcze jednym jej atutem, jest dodatek świeżej żurawiny, która, po lekkim podduszeniu, stanowi pewną formę sosu, który niesamowicie wzbogaca całokształt i sprawia, że pieczeń jest bardziej mokra i jeszcze lepiej się ją je.

Polecam wszystkim, i niech Was nie przeraża dość długi opis przygotowania. Nie oznacza to, że jest skomplikowana do zrobienia, po prostu wymaga kilku zabiegów, które trzeba było dokładnie opisać. W skrócie polega to na tym, że najpierw przygotowujemy risotto/kaszotto, które będzie naszą bazą, a potem mieszamy je z resztą składników i całość ląduje w piecu. Nic trudnego ;)


Nieznacznie zmodyfikowałam ten przepis




SKŁADNIKI (1 standardowa keksówka):

  • 1 garść suszonych borowików (20g)
  • 2 łyżki oliwy z oliwek extra virgin
  • 2 pałki selera naciowego
  • 2 czerwone cebule
  • 2 ząbki czosnku
  • 150g suchej kaszy pęczak (lub ryżu arborio dla wersji bez glutenu)
  • 100 ml białego wina (można pominąć)
  • 1L bulionu warzywno-grzybowego *
  • 200g świeżych brunatnych pieczarek (można zastąpić zwykłymi, a najlepiej jest użyć swieżych leśnych grzybów, kiedy jest na nie sezon)
  • 100g migdałów
  • 100g pistacji **
  • 2 łyżki mąki z ciecierzycy
  • 1 mała, świeża papryczka pepperoni
  • starta skórka z 1/2  niewoskowanej cytryny (koniecznie! wspaniale urozmaica smak)
  • po 2 gałązki świeżego rozmarynu,tymianku oraz szałwi
  • 2 łyżki ksylitolu lub brązowego cukru
  • 400g świeżej żurawiny
  • sól,pieprz do smaku


* wodę z moczenia suszonych grzybów dopełniamy bulionem warzywnym, aby uzyskać 1L wywaru
** pistacje powinny być niesolone, ale jeśli trudno Wam takie znaleźć, użyjcie solonych i pomińcie, lub znacznie ograniczcie dodatkową sól w przepisie



PRZYGOTOWANIE:


1. Zalewamy suszone grzyby wrzątkiem, odstawiamy na 10-20 minut.

2. Na początku musimy przygotować kaszotto/risotto, które będzie bazą do pieczeni. Siekamy umyte pałki selera i cebulę, wyciskamy czosnek. Na głębokiej patelni lub w garnku grzejemy oliwę, wrzucamy seler i cebulę, smażymy ok. 10 minut. Dodajemy czosnek i podsmażamy jeszcze 2 minuty.
W międzyczasie odcedzamy wodę z grzybów, zachowujemy wodę z ich moczenia i dopełniamy ją bulionem aby uzyskać 1 L wywaru. Wlewamy go do małego rondelka i ustawiamy na małym gazie, obok patelni, na której smażą się warzywa do risotto (kaszotto)
Zwiększamy ogień gdzie smażył nam się seler i cebula, wrzucamy tam pokrojone borowiki i kaszę, mieszamy, podsmażamy 1 minutę i wlewamy wino (jeśli używamy, jeśli nie to krok ten pomijamy), mieszamy i czekamy aż odparuje. Następnie wlewamy bulion chochlą, stopniowo, po jednej łyżce, kiedy kasza/ryż go wchłonie, wlewamy następną. Postępujemy tak, aż kasza będzie miękka. W zależności od użytej kaszy (ekologiczna dłużej się gotuje) może to potrwać 30-40 minut, ryż arborio zajmie nam ok 20 minut. Gdy kaszotto jest gotowe, odstawiamy je do ostygnięcia.

3.Teraz grzejemy oliwę na patelni i wrzucamy pokrojone pieczarki, smażymy na średnim ogniu 5-10 minut. W międzyczasie siekamy pistacje i migdały, możemy również delikatnie je rozkruszyć w blenderze. (można też odłożyć część pistacji do dekoracji). Nastawiamy piekarnik na 190°C

4. Dodajemy pieczarki i orzechy do risotto (kaszotto) razem z resztą składników (oprócz cukru i żurawiny, czyli: zioła,startą skórkę z cytryny,posiekaną ostrą papryczkę,mąkę z ciecierzycy,sól,pieprz). Mieszamy dokładnie i na chwilę odstawiamy. Dobrze jest też masę pougniatać mocno w rękach aby delikatnie zmiażdżyć kaszę, lepiej się wtedy sklei.

5. Ostatnią czynnością jest przygotowanie skarmelizowanej żurawiny, która znajdzie się na wierzchu pieczeni. W tym celu umytą żurawinę (400g) dzielimy na pół, 200g wykorzystamy bezpośrednio przed serwowaniem. Stawiamy niedużą patelnię na średnim gazie i wrzucamy na nią 200g żurawiny, czekamy, aż zacznie pękać i wrzucamy cukier, zwiększamy ogień i chwilę podsmażamy aż wszystko się ładnie skarmelizuje. Mieszankę tę wykładamy do wyłożonej papierem formy (keksówki). Następnie na to wkładamy naszą masę na pieczeń. Wyrównujemy dokładnie i stukamy kilkakrotnie formą o stół, aby pozbyć się nadmiaru powietrza w masie. Zakrywamy folią aluminiową.

6. Wkładamy formę do nagrzanego piekarnika i pieczemy 45 minut z folią, a następnie jeszcze 15 minut bez folii. Wyjmujemy z piekarnika i odstawiamy do ostygnięcia na min. 10 minut. Pamiętamy o tym aby odwrócić formę do góry nogami przed ułożeniem pieczeni na półmisku. Żurawina powinna być na górze.

7. Bezpośrednio przed podaniem, podsmażamy pozostałą żurawinę na patelni (bez cukru i oleju) i dekorujemy nią wierzch pieczeni. Posypujemy posiekanymi pistacjami lub innymi wybranymi dodatkami. Pieczeń możemy również serwować na zimno. Przechowujemy ją w lodówce do 5 dni.

Vegan nutroast from Jamie Oliver


This is my Christmas hit this year. As soon as I found this recipe I knew immediately that I had to try it. I really like Jamie and his veg dishes. There is a lot of simplicity and natural ingredients in his cooking, and this is something that I really like as well.

I knew that the nutroast will be good, but I did not expect that it will be sooo good. Lemon gives the amazing accent, a great "kick" to the rest of the quite neutral ingredients. In the dish you can clearly taste mushrooms and herbs as well, and it's firm enough, so it doesn't fall apart when you cut it. Another advantage, is the addition of fresh cranberries, which are caramelised and create some kind of "sauce" so the nutroast isn't too dry. 


I really encourage you to try it, and don't be scared by quite a long description of the preparation. method. This does not mean that it is complicated, it just requires a few procedures that had to be precisely described. Shortly, you just have to prepare risotto which is yur base and then mix it with the rest of the ingredients and pu it in the oven. Simple ;)


I slightly modified this recipe



INGREDIENTS (1 standard loaf tin):

  • 1 handful of dried wild mushrooms (for ex. porcini) (20g)
  • 2 tbsp extra virgin olive oil
  • 2 celery stalks
  • 2 red onions
  • 2 garlic cloves
  • 150g pearl barley (or arborio rice for gluten-free version) (dry weight)
  • 100 ml white wine (optional)
  • 1L vegetable-mushroom stock *
  • 200g fresh brown mushrooms (or regular mushrooms or fresh wild mushrooms when they are in season)
  • 100g almonds
  • 100g pistachios
  • 2 tbsp chickpea flour (besan)
  • 1 small, fresh pepperoni pepper
  • lemon peel from 1/2 lemon
  • 2 sprigs of each: fresh rosemary,thyme and sage
  • 2 tbsp xylitol or brown sugar
  • 400g fresh cranberries
  • salt, pepper to taste

* save water from soaking wild mushrooms and add vegetable stock to get 1L of liquid



PREPARATION:

1. Soak wild mushrooms in hot water for 10-20 minutes.

2. At the beginning you have to prepare risotto, using pearl barley or arborio rice, this will be the base for the nutroast. Chop celery sticks and onion, press garlic. Heat deep frying pan with olive oil , add celery and onions, fry for approx. 10 minutes. Add the garlic and fry for another 2 minutes.
In the meantime, drain off the mushrooms, keep the water and fill it up with vegetable broth, you need to have 1L of the stock. Keep the broth hot in a small saucepan, next to the pan with fried celery and onion.
Add the chopped porcini mushrooms and barley to the pan and stir fry for 1 minute, add wine, stir and wait until it evaporates. Then pour a ladle of the broth gradually, one spoon at a time, when barley absorbs it, pour another one. Do it, until the barley is tender. Organic pearl barley may take 30-40 minutes, arborio rice takes about 20 minutes. When the barley is cooked, turn off the heat and leave it to cool down.

3.Now, heat the oil in a frying pan and toss sliced mushrooms, fry over medium heat for 5-10 minutes. In the meantime, chop the pistachios and almonds, you can also gently crushed them in a blender. (leave some pistachios for decoration). Turn on the oven to 190 ° C / 380° F

4. Add the fried mushrooms and nuts to the risotto, along with the rest of the ingredients (except sugar and cranberries, add: herbs, lemon zest, chopped hot pepper, chickpea flour, salt and pepper). Mix thoroughly and leave it for a while. It is also good to crush the base with your hands, these will make it more sticky and firm.

5. The last step is to prepare caramelised cranberries, which will be on top of the nutroast. Use 200g of your cranberries (you will use the rest later). Put a small pan on medium heat and add cranberries, wait until they start to burst and add sugar, increase the heat and fry briefly until everything is nicely caramelised. Now transfer them into the loaf tin, lined with baking paper. Then add the nutroast mix on top. Carefully level it up and tap it on the table several times to get rid of excess air in the mass. Cover with kitchen foil.

6. Put it in the preheated oven and bake for 45 minutes (with the kitchen foil on top), and then another 15 minutes without the foil. Remove from the oven and leave it to cool for 10 minutes minimum. Remember to turn the tin upside down before placing it on a platter. Cranberries should be at the top.

7. Immediately before serving, fry the remaining cranberries in the pan (without sugar and oil) and put them on top of the nutroast.  Sprinkle with chopped pistachios or other selected additives. You can also prepare the nutroast the day before and serve it cold. Store it in the fridge for up to 5 days.

  5. Chcę zrobić tę pieczeń na święta. Co prawda to inne święta, ale i tak mogę, a czemu nie! Czy mogę użyć mrożonej żurawiny? Pozdrawiam gorąco i przed-świątecznie! :)

    1. oczywiście :) żurawinę karmelizujemy przed, także mrożona się rozmrozi na patelni ;) p.s. uwielbiam tę pieczeń, nadaje się na każde specjalne okazje :)
