VEGAN PROTEIN DINNER. GARLICKY-POTATO MASH WITH PURYA SUNFLOWER PROTEIN, SERVED WITH SPICY TOFU CUTLETS AND GREEN BEANS.



Witajcie ☺ Dziś zapraszam Was na smaczny i odżywczy obiad, który doda Wam energii i nasyci, a przy okazji dostarczy również sporej ilości białka.

Jest to kolejny przepis, który stworzyłam dla firmy PUR YA! producenta wegańskich i witariańskich suplementów białkowych oraz wysoko-odżywczych mieszanek  z superfoods. Specyfiki te idealnie nadają się do codziennych smoothie i milkshake'ów, solidnie wzbogacając naszą codzienną dietę. 

Jednak oprócz takiego użycia, suplementy te, można również stosować na wiele innych sposobów. Podoba mi się właśnie takie niestandardowe ich wykorzystanie i w dzisiejszym przepisie, proteinowy proszek wylądował w ziemniaczanym puree.

Nie wpłynęło to na jego smak, a podniosło walory odżywcze. Puree samo w sobie też nie jest takie zwyczajne. Powstało jako inspiracja popularną grecką przystawką, która nazywa się "skordalia". Tak podane ziemniaki są wzbogacone dobrą oliwą z oliwek, dużą ilością świeżego czosnku oraz soku z cytryny. Bardzo lubię tę kompozycję i w to danie bardzo dobrze się ona wpasowuje.

Taki obiad polecam też tofu-sceptykom. Spróbujcie je przygotować wg tego przepisu, bardzo możliwe, że zmienicie zdanie na jego temat. Dzięki długotrwałej i odpowiednio skomponowanej marynacie, znika charakterystyczny posmak tofu, a sojowy serek przenika aromatem przypraw i dodatków, dzięki czemu kotlety są naprawdę wyborne. Polecam.

SKŁADNIKI (2 porcje):


PUREE ZIEMNIACZANE:


  • 4 średnie ziemniaki (600 g)
  • 2 łyżki protein słonecznikowych PUR YA!
  • 2 ząbki czosnku
  • 2 łyżki oliwy z oliwek extra virgin
  • 2 łyżki soku z cytryny
  • 1/4 łyżeczki różowej soli himalajskiej
  • 8-10 łyżek niesłodzonego mleka roślinnego lub wody (około 1/2 szklanki)

MARYNATA DO TOFU:


  • 2 łyżki sosu sojowego
  • 2 łyżki oliwy z oliwek
  • 1 posiekana papryczka chili lub pepperoni lub 2 łyżeczki sosu Sriracha
  • 2 wyciśnięte ząbki czosnku
  • 2 cm świeżego imbiru, startego
  • 2 łyżeczki ulubionego słodzidła (np. syropu klonowego/daktylowego lub cukru)
  • 4 łyżki świeżo wyciśniętego soku z cytryny
  • 1 łyżka suszonego tymianku lub 2 łyżki świeżych liści tymianku (opcjonalnie)


DODATKI:


  • 200 g fasolki szparagowej (świeżej lub mrożonej)
  • kiełki słonecznika
  • zielenina
  • prażone nasiona słonecznika



POZOSTAŁE SKŁADNIKI:




PRZYGOTOWANIE:

Tofu będzie najlepiej smakować, jeśli zamarynujemy je dzień wcześniej, jednak kilka godzin marynowania tego samego dnia też będzie ok.

Mieszamy składniki marynaty w małym płaskim naczyniu. Wyjmujemy tofu z opakowania, odsączamy, owijamy w kilka arkuszy ręcznika papierowego, kładziemy na talerzu i dociskamy jakimś ciężarem z góry, tak, aby wycisnąć z niego nadmiar wody, pozostawiamy je tak na około 10 minut.
Następnie odwijamy i kroimy na 2 duże plastry lub kilka mniejszych kawałków. Umieszczamy tofu w naczyniu z marynatą. Przykrywamy i wstawiamy do lodówki na kilka godzin lub najlepiej na całą noc. W czasie marynowania, kilka razy polewamy je marynatą z góry, lub przewracamy kawałki na drugą stronę, aby zamarynowały się równomiernie.

Ziemniaki myjemy i gotujemy na parze (razem ze skórką) przez ok. 30-50 minut, w zależności od wielkości ziemniaków.

W połowie gotowania dodajemy fasolkę do parowaru i gotujemy ją przez 15 minut.

Gdy ziemniaki nieco ostygną, obieramy je i przeciskamy przez praskę (jeśli jej nie mamy, ziemniaki możemy przecisnąć przez sitko, trwa to dłużej i wymaga trochę siły, ale dzięki temu puree wychodzi idealnie gładkie). Następnie mieszamy je z pozostałymi składnikami i odstawiamy.

Rozgrzewamy patelnię i prażymy na niej nasiona słonecznika, odstawiamy.

Następnie, na patelnię wlewamy 2 łyżki oleju, tofu wyjmujemy z marynaty i obtaczamy je w mące, smażymy na rozgrzanym tłuszczu na złoty kolor. Odsączamy na ręczniku papierowym.

Układamy porcje puree na talerzu, na nim kładziemy nasze kotlety a następnie fasolkę, kiełki i nasiona słonecznika.

Hello ☺ Today I'm inviting you all for a tasty and nutritious dinner that will give you energy, and a lot of protein.

I created this recipe for PUR YA! A german manufacturer of vegan and raw food protein supplements and high-nutrient blends with superfoods. These products are ideal for everyday smoothies and milkshakes, which enrich our daily diet.
However, apart from drinks, these food supplements can also be used in many other ways. I'm really amazed, how versatile they are, and this time I added the sunflower protein to the potato puree.

It did not affect the taste but the nutritional values ​​raised. And the puree itself it's not so ordinary either. It was inspired by a popular Greek appetizer called "skordalia". Where potatoes are enriched with good olive oil, lots of garlic and fresh lemon juice. I love this composition and it fits in this dish beautifuly.


I would also love to recommend this dinner to the tofu-skeptics. Try to prepare it with this recipe, it is likely that you will change your mind about it. The long marinating in specially selected ingredients helps to remove the specific tofu taste, that some people hate. Cutlets are spicy, aromatic and very good.

INGREDIENTS (2 servings):


POTATO MASH/PUREE

  • 4 large potatoes (600 g)
  • 2 cloves of garlic
  • 2 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1/4 tsp pink himalayan salt
  • 8-10 tbsp unsweetened plant milk or water (about 1/2 C)


TOFU MARINADE

  • 200 g tofu
  • 2 tbsp soy sauce
  • 2 tbsp extra virgin olive oil
  • 1 chopped chili pepper or 2 tsp sriracha
  • 2 clove of garlic, pressed
  • 2 cm fresh ginger, pressed/grated
  • 2 tsp favorite sweetener (for ex. date/maple syrup or brown sugar)
  • 4 tbsp freshly squeezed lemon juice
  • 1 tbsp dried thyme or 2 tbsp fresh thyme leaves (optional)


TOPPINGS:

  • 200 g green beans (fresh or frozen)
  • sunflower sprouts
  • fresh greens
  • toasted sunflower seeds


REMAINING INGREDIENTS:

  • 1/2 C corn or chickpea flour, for coating the tofu cutlets
  • vegetable oil, for frying


PREPARATION:

Prepare the tofu on the day before or few hours before serving, so it will marinade properly.

Mix the marinade ingredients in a small flat container. Remove the tofu from the package, drain, wrap in a few sheets of paper towel, put it on a plate, press with some heavy weight on top (a jar with water for example) and leave for about 10 minutes, to release the excess water. Then unrap it, cut it into desired shapes and put in a dish with marinade. Cover it and put in the fridge for few hours, or preferably overnight. Shake the container few times or pour the marinade on top of the tofu, while it's marinating, to make sure all the sides will marinate evenly.

Cook the potatoes (with their skin on) in a steamer until soft, 30-50 minutes, depending on the size of the potatoes.

Half way through cooking add green beans to the steamer, so they will cook for 15 minutes.

When potatoes and beans are soft, take them off the heat, drain and set aside, try to keep the beans warm, so you won't have to heat them up again before serving.

When the potatoes has cooled down a bit, peel them and press with the potatoto press for a smooth puree, if you don't have a potato press, use a fine strainer and press the potatoes through it, till you will get a smooth puree. Mix it with the rest of the ingredients and set aside.

Heat a small frying pan and toast the sunflower seeds in it, if using.

After that add 2 tbsp of vegetable oil to the pan, coat the tofu cutlets in flour and fry on both sides until crispy and golden brown.
Then put it on a plate with a paper towel to drain it from the oil.

Warm up the potato mash and beans and arrange the meal on a plate.
Start with a potato mash, then put the tofu cutlets on top, finish it with green beans, sprouts, greens and toasted sunflower seeds.

Serve and enjoy ☺
